Cherry Tomato and Onion Jam Tart

A simple favourite, thats great for sharing!

Cherry Tomato and Onion Jam Tart

Preheat oven to 180˚C

Spray tart tin with olive oil and line with pastry, cutting off any overlap

Bake for 8 to 10 minutes (you could blind bake too)

In a bowl mix onion jam, chives and pepper through ricotta. Spread mixture evenly inside the tart

Place halved tomatoes (cut-side down) on top of the mixture – as per photo

Place tart in oven for 20 minutes until golden and tomatoes have softened

Drizzle with balsamic vinegar, sprinkle over fresh basil leaves and serve with a crisp green salad
