Halloween Stuffed Capsicums!
Heat oven to 180 degrees celcius
Use a sharp knife to slice the top off each capsicum horizontally. Set the tops aside and remove all seeds and membranes from the capsicums and pat the capsicums dry with a paper towel.
Using a small pairing knife, cut holes in the exterior to make the jack-o-lantern faces.
Arrange the capsicums on a baking paper-lined oven dish and cook in the oven for 20-25 minutes or until cooked but are still firm. Remove from the oven and allow to cook while cooking the filling.
For the filling
Heat 1 Tbsp of olive oil in a large frypan over medium heat. Add diced onion and mushrooms and saute for 3-4 minutes or until mushrooms have softened.
Increase heat to a medium-high temperature. Add mince and spice to the pan and continue to cook, stirring occasionally until no pink remains. Optional: add grated mozzarella cheese for gooey effect.
Drain excess grease from the pan and add pasta sauce and cooked rice. Stir to combine and cook for 2-3 more minutes.
Just before serving - fill each pepper with approximately 1 cup of mixture, overfilling each capsicum slightly. Pop the top back on and enjoy!
