Method
Preheat oven to 180°C fan bake. Line an oven tray with baking paper
Place the carrots on the oven tray and drizzle with olive oil
In a small bowl combine the cumin, paprika, cinnamon and salt. Sprinkle over the carrots
Bake until tender – about 15-20 minutes
Combine sour cream and lime juice in a small bowl
Place carrots on a platter or bowl and top with the sour cream mixture, coriander and pistachios
