Stuffed Portobello Mushrooms
Method
Preheat oven to 180 degrees
Wash and remove stem from mushrooms. Pat mushrooms dry with paper towel, and brush oil on top of the mushrooms
Sauté garlic and chorizo sausages in a dash of oil over medium heat until garlic and chorizo is browning, about 2 minutes
Place garlic with chorizo into a bowl. Add chopped courgette and mix
Spread mixture evenly onto each mushroom. Top with mozzarella, breadcrumbs and a sprinkle of Parmesan cheese
Bake in the oven for 15 minutes, until lightly golden
Serve with fresh parsley and salad greens
