Method
Preheat oven to 180°C fan bake
Coat the parsnips in olive oil and spread across a baking tray. Season with salt and pepper
Roast for 15 minutes then turn parsnips. Roast for 10-15 minutes longer until golden and cooked through
Top with chopped coriander and serve warm
